Tally Dedushi Is A Talented and Experienced Sommelier
Tally, originally from Montenegro, has been with Inside Park at St. Bart's for 8 years. Over the years, he grew to love the interaction of various liquors with food, especially wine. Learning about wine and its many intricacies became his ongoing passion.
Tally’s passion for wine and food pairing is strong and evident as he discusses the wine program at Enotria Wine Bar. His goal is to introduce you to new wines paired with your favorite dishes with hopes that at least one of the new, world class wines he’s presented to you becomes a new favorite.
One of the many unique things about the experience at Enotria Wine Bar is the availablity of wines by the glass that are typically only available by the bottle. To maximize the taste of these selections Enotria Wine Bar utilizes a state of the art wine dispensing station to ensure the wine is served at the perfect temperature so you can experience each wine at its best!
The wine list at Enotria Wine Bar has been curated to accommodate all palates and budgets and features the world's best wines. Grand Cru, Premier Cru and single vineyard wines from all over the world make up the core of the selections here. The staff at Enotria Wine Bar has been thoroughly trained and can make expert recommendations based on your feedback of what you like best.
As an extension of their wine expertise, Enotria Wine Bar also offers Wine Pairings and Tastings at all times. These special pairings feature three 2 oz pours of Grand Crus from France, Italy and California. You’ll receive a written profile for each wine included and the staff can contribute additional details throughout the experience.
Private dinners can also be arranged. These private wine dinners feature 3 & 4 course wine pairings and are hosted in the Enotria Wine Bar. Up to 30 guests can be seated for these and it’s a great way to expand your wine palate amongst friends and family..
The Food and Wine Pairings at Enotria Wine Bar Are Perfect Every Time!
During a recent visit we sampled several dishes at the Enotria Wine Bar and these were prepared brilliantly by Chef Denton Whyte, who has been with Inside Park for 11 years. Tally provided appropriate wine pairings for each and we enjoyed them all very much!
We started out with a "mix and match" cheese plate that was full of unique and interesting flavors. Along with the assorted cheeses were fresh grapes, walnut bread, fig jam, jug mustard, house pickles and exceptionally cured meats. This was paired with a Single Vineyard Malbec. You can create your own cheese plate at Enotria Wine Bar from their selection of imported cheeses and chef's choice accompaniments. The selections avalable will vary by season.
Next on our visit was the extremely well crafted Manchurian Cauliflower Bites! The cauliflower was perfectly tempura fried with garlic and scallion. We could have eaten these all day long. Highly recommended!
We also sampled the Burrata and Heirloom Tomato with grilled tomato, basil pesto, toasted ciabatta with just the right amount of balsamic dressing. For this we enjoyed a pairing of a bone dry Pinot Gris.
For the finish we chose the Faroe Island Salmon, which was served with shaved fennel, mint, spring peasand charred tomato. This was one of Chef Denton’s specialties and it was prepared perfectly! This plate was paired with an Oaky Chardonnay and it rounded out the dish very well.
