Carter began cooking while in music school. It was a natural transition from Jazz to the Kitchen as they both draw from the same creative well. He began in pastry and bread baking which he still loves. He transitioned from pastry, to sous chef when he joined the team that opened El Camino. "I took a lot away from that experience. It shaped my love for Latin American food that led me eventually here, to Wild Ritas. Now I get to mix my love for the southern united states and Kentucky with the colors and flavors of Latin America."

John Varanese relocated to Louisville, Kentucky, from Charleston, South Carolina, in 1998 when he was hired by local favorite Azalea to be the Executive Chef. By 2008, he was opening his namesake restaurant Varanese on historic Frankfort Avenue. He is currently one of the area’s premier chefs, and his restaurants have become dining destinations that have drawn huge crowds each year.

Allen Hubbad was born in Louisville, Kentucky and has two children. He spent six years in the US Marine Corps as a Food Service Specialist and graduated from Sullivan University with a Culinary Arts Degree. He worked as Sous Chef at Vincenzo's, spent 4 years as an Executive Chef at 2 local universities and has been with Martini Italian Bistro for over 7 years. His hobbies include going to the track, dancing, traveling and of course a good meal!

A Louisville native Matt Weber began his culinary career at Cafe Metro one of the city’s first premier fine dine restaurants, and the Uptown’s now defunct sister restaurant, in the 1980’s. During his time at Cafe Metro he worked as a busser,server and Pastry Chef. He made the transition to the Uptown Cafe in the early ’90’s where he honed his cooking skills and became Head Chef. Matt lives in Crescent Hill with his wife and two sons. In addition his passion for food and wine Matt enjoys spending time with his family, cycling and staying fit.

Eric Shaw is back at Jack Fry’s restaurant in Louisville, this time serving as Executive Chef after previous stints with us as Chef de Cuisine and as a Line Cook. He worked most recently in Chicago as a Sous Chef at beloved farm-to-table staple Lula Café, and before that at its sister restaurant, Nightwood. During his time in Chicago, Eric was heavily involved with Pilot Light, a chef-driven nonprofit focused on promoting children’s food literacy by infusing culinary arts with existing school curricula.
