John Stropki is the Executive Head Chef at Cru Uncorked. A Cleveland native, John studied at The Culinary Institute of America and The French Pastry School. He apprenticed with American Culinary Federation and has experience in a variety of hospitality offerings including hotels, restaurants, clubs and corporate dining.

The artistry of the craft drew him to the industry after high school. He is passionate about plate design, pastry proficiency and culinary education. As the Executive Head Chef at Cru Uncorked, John feels blessed to express his vision as a chef work while working with the highest integrity ingredients at this world-class organization.

How did you develop your love of cooking?

Through my father – he cooked most of our meals growing up. I would taste the food as he prepared the dinners, and he would let me help him.

How did you end up in or choose to work in Cleveland?

I love Cleveland – I grew up here and never left!

What is your favorite thing about cooking?

I love cooking because each day is different and I can be creative with each dish I prepare. My recipes are constantly evolving.

What is your favorite thing about Cleveland?

It is hard to pick just one thing. I love that Cleveland has great Museums, the Symphony, Lake Erie, the Metro Parks and great sports teams. We have it all!

Your thoughts on the future of Cleveland’s foodie scene?

The foodie scene in Cleveland is alive and thriving, a new wave of young chefs and cooking styles along with different cultures make Cleveland a great food venue.

How have you developed your cooking skills to focus on French Cuisine?

I was trained in classical French cooking – I have added my own twist to make it a bit more contemporary – but French cooking is my passion.

What is your main goal for guests dining at Cru Uncorked?

We want our guests to thoroughly enjoy their experience at Cru Uncorked – an intersection of French ambiance, fine good, great wines and terrific service.
